I have been all over the wine world time and again and then again. Tasted thousands of different wines and there are only a few places that haunt me, always come back to mind, occupy my dreams and have me back again to taste some more.
Layer Cake is my personal quest to open the door to these places, to seek out great sources of fruit, to work with a great farmer, a piece of land and craft something magical. I hope you enjoy the journey half as much as I do…
My old grandfather made and enjoyed wine for eighty years. He told me the soils in which the vines lived were a layer cake. He said the wine if properly made, was like a delicious cake layered with fruit, mocha and chocolate, hints of spice and rich, always rich.
“Never pass up a good layer cake” he would say.
